Ingredients
- 2 lbs Large Shrimp (cleaned & deveined)
- 2 tbsp cooking oil
- 1 tbsp paprika
- 1-2 chipotle pepper (minced)
- 2 tsp chilli powder
- 1 ½ tsp garlic powder
- 1 ½ tsp onion powder
- 1 tsp cumin
- 1 tsp black pepper
- 1/2 tsp salt
- romaine lettuce (chopped)
- canned corn
- black beans
- avocado
Cilantro Lime Rice
- 2 cup jasmine rice
- 1/2 cup cilantro
- 1/2 lime (juiced)
- 2 tbsp butter
- salt (to taste)
Tomato Salsa
- 4 roma tomatoes (chopped)
- 1/4 cup red onion
- 1/3 cup chopped cilantro
- 1/2 lime (juiced)
- 1/2 tsp black pepper
- 1/2 tsp salt
Chipotle Sauce
- 1 cup sour cream
- 1/4 cup mayonaise
- 2 chipotle peppers
- 1/4 cup cilantro
- 1 tsp cumin
- 1½ tsp garlic powder
- 1 ½ tsp onion powder
- juice of half a lime
- 1/2 tbsp honey or maple syrup
- 1/4 tsp salt
Instructions
- To prepare the shrimp, marinate with paprika, minced chipotle pepper, chili powder, garlic powder, onion powder, cumin, black pepper and salt. Set aside.
- For tomato salsa, add chopped tomatoes. diced red onion, chopped cilantro, lime juice, salt and pepper to bowl. Mix until combined. Set aside in fridge until ready to serve.
- Cook rice according to package directions. Fluff rice and add butter, the juice of one lime and cilantro leaves. Keep warm.
- Meanwhile, place sour cream, mayo, whole chipotle peppers, cilantro, cumin, garlic powder, onion powder, lime juice, honey and salt to blender. Blend until smooth and creamy. Set aside in fridge.
- To cook shrimp, heat pan to medium-high heat. Cook shrimp for 90 seconds on each side. Remove from pan.
- To assemble bowl, layer cilantro lime rice, shrimp, tomato salsa, lettuce, corn, black beans, and avocado.
- Drizzle Chipotle Sauce over bowl and enjoy!
